And you thought we were just sticking to savoury veggie recipes. But when GROW HQ’s Head Chef, JB Dubois, offers up the recipe for his legendary beetroot brownies we couldn’t say no!
Beetroot Brownies

What You Need
Makes 6-8 brownies
- 150g grated cooked beetroot
- 150g butter
- 150g dark chocolate
- 150g sugar
- 90g flour
- 2 eggs
- 30g flax seeds
How To Make
Instructions:
- Preheat the oven to 160˚C
- Melt the chocolate and butter in a plastic bowl in the microwave on low power or in a mixing bowl over a pan of boiling water (using
a technique called a ‘bain-marie’) - Whisk the eggs with the sugar in a second mixing bowl for three minutes before adding in the melted chocolate mix.
- Fold in the sieved flour before folding in the grated cooked beetroot.
- Pour the brownie mix into a greased baking pan (approx. 22x22cm).
- Sprinkle the flax seeds over the top and bake in the oven at 160˚C for 35min.
- Serve lukewarm… And remember to share them!
