Braised Peas with Smoked Bacon

It is difficult to beat the delicious taste of homegrown peas. And the flavour mix of homegrown peas and smoked bacon in this recipe is an absolute winner. This dish works perfectly as either a side dish or a tasty light lunch.

What You Need

  • 4 slices of smoked steaky bacon
  • 1 shallot (or ¼ of onion)
  • 1 garlic clove
  • 1/2 teaspoon of chopped thyme
  • 200g homegrown peas
  • 10ml chicken stock
  • 15g butter
  • 1 teaspoon of rapeseed oil

How To Make

Instructions:

  • Dice the smoked bacon.
  • Peel and finely chop the shallot and garlic.
  • In a large frying pan fry the diced bacon with the rapeseed oil for few minutes on medium heat.
    Turn down the heat and add the butter.
  • Once the butter has melted add the shallot and garlic and cook for few minutes until the shallot softens.
  • Add the chopped thyme and chicken stock. Bring to simmer point and add the peas.
  • Cook for 3 to 4 minutes while stirring.
