Carrot Burgers

We asked GROW HQ’s Head Chef, JB Dubois, for a carrot recipe and he shared these delicious veggie burgers. Best served with hummus in a soft bread roll with a side helping of crunchy salad.

What You Need

Makes 6-8 burgers

  • 400g carrots
  • 75g flour
  • Sea salt
  • 50ml rapeseed oil (plus a little more for frying)
  • 1/2tsp coriander seeds
  • 2 cloves of garlic (finely chopped)
  • Pinch of fresh chilli (chopped)
  • 50g flax seeds

How To Make

Instructions:

  • Pre-heat the oven to 180˚C
  • Peel and grate the carrots, place in a large mixing bowl and add the sea salt. Massage until you feel the carrot soften under your fingers.
  • In a small frying pan, toast the coriander seeds on a medium heat for two minutes before adding the rapeseed oil, garlic and chilli – infuse for two more minutes.
  • Add the spiced oil to the bowl of grated carrots and mix well. Add the flour and mix again.
  • Portion into generously sized burgers. Coat each burger with the flax seeds.
  • Place a large frying pan on a medium heat with a little rapeseed oil. Fry off the burgers for 2-3 minutes on each side, then finish cooking in the oven at 180˚C for 10 minutes.
